Prior to Coastal Carolina: Bishop played 284 sets in 83 matches during her three seasons at UB. Her 3.79 points per set and 3.34 kills per set both rank second among UB's all-time career leaders, while her 1,075.0 total points are fifth all-time. Bishop also posted a .221 career hitting percentage, and averaged 1.71 digs and 0.54 blocks.

Bishop was a two-time All-Mid-American Conference (MAC) first team selection, earning the distinction as both a junior (2014) and sophomore (2013).

Bishop's junior season in 2014 saw the outside hitter average 4.51 points and 4.13 kills per set, which rank first and second, respectively, among UB's all-time single-season leaders. She also finished third on the team that season with 245 digs. Bishop was twice named the MAC East Offensive Player of the Week as she reached double figures in kills 21 times and surpassed 20 kills seven times.

Bishop had a record-breaking season for the Bulls as a sophomore in 2013, becoming the first UB player to reach 400 kills under the current NCAA 25-point scoring format. She set a school record for kills in a three-set match with 20 against Eastern Kentucky, and also finished with the school's first 20-kill, 20-dig match since 2003. Her 4.23 points per set that season rank second among UB's single-season records, while her 461.0 total points are third.

Along her with her NCAA experience, Bishop has seen action on the international stage as she helped the Jamaican National Team win a bronze medal over the U.S. Virgin Islands in the 2014 World Championship Qualifiers in Mississauga, Ontario. In the bronze-medal match, Bishop put down eight kills while hitting .333, and added four service aces, two digs and a block. She also played against the Canadian and Mexican national teams during the tournament.

Prior to attending Buffalo, Bishop played high school volleyball and basketball at Sinclair Secondary School, and was captain of the Toronto Diamonds Volleyball Club where she led the club to three gold medals and a bronze medal at the Buffalo Can-Am Tournament.
